Apple Sponge

Ingredients

Apple Filling  
   
1 1/2 lb cooking apples, sliced  
3-4 tbs. water  
3 Oz. sugar  
4 cloves  
   
Sponge  
   
1 egg  
1/3 cup butter  
1 cup SR flour  
1/2 cup milk  
1/2 cup sugar  
pinch of salt  
vanilla essence  
   

Method

Apple Filling

Mix all ingredients together and cook until apples are soft. Remove cloves.

Sponge

Lightly beat egg. Cream butter & sugar, add egg gradually and then flour & milk alternately. Put hot apples in oven proof dish & pour sponge over top.

Bake at 190C for 60 minutes.

Note: Almost any fruit can be used including bottled or canned fruit, but it must be hot when the sponge mixture is poured over top. Peach and apricot is a great combination.
