Blueberry and Lemon Friands

Ingredients

175g unsalted butter  
1 cup almond meal  
1 tablespoon finely grated lemon rind  
1 3/4 cups sifted icing sugar  
5 tbs. plain flour  
5 egg whites  
200g blueberries (fresh or frozen)  
   

Method

Preheat oven to 200C

Place butter in a saucepan over low heat and cook until it is a very light golden colour.

Place almond meal, lemon rind, icing sugar and flour in a bowl and mix. Add melted butter then egg whites and mix until combined.

Pour mixture into greased muffin cups or patty tins. Sprinkle with blueberries.

Bake for 15 minutes or until they are golden and springy to touch. Cool on wire racks and dust with extra icing sugar.
