Easy Fruit Cake
Ingredients
375g mixed fruit | |
1 1/2 cup sugar | |
2 tbs. margarine | |
2 cups boiling water | |
2 eggs | |
4 cups SR flour | |
1 tsp. vanilla essence | |
Method
Preheat oven to 180C
Place fruit, sugar and margarine in a large mixing bowl and pour boiling water over top and stand for 4 minutes. Add eggs then flour & vanilla.
Bake for 70 minutes. May need covering with alfoil for last 20 minutes to prevent burning.
