Fresh Cherry Pie

Ingredients

1 pie crust
4 tbs. small seed tapioca
1/8 tsp. salt
1 cup sugar
4 cups pitted fresh cherries
1/4 tsp. almond extract
1/2 tsp. vanilla extract
1 1/2 tbs. butter
 
Crumble Topping
3/4 cup plain flour
1/2 cup sugar
1/3 cup butter

 

Method

Preheat oven to 200 C (400 F).

In a large mixing bowl combine tapioca, salt, sugar, cherries and extracts. Let stand 15 minutes.

Combine crumble topping ingedients and rub until butter is blended through.

Pour cherry mixture into crust and dot with butter. Cover with crumble topping. Place pie on a tray (in case of drips) and bake fir 50 minutes or until golden brown.

You can also use a pastry top instead of the crumble topping. Be sure to press join the top to the crust and cut some vents in the top.
