Fruit & Rice Cheesecake

Ingredients

Pastry  
   
1/2 cup plain flour  
1/2 cup SR flour  
3 oz butter  
1 tbs icung sugar  
1 tsp grated orange rind  
1 egg yolk  
orange juice  
   
Filling  
   
1 can crushed pineapple  
2 passion fruit  
4 level tsp gelatine  
250g cream cheese  
1/2 cup sugar  
1/4 cup rice cooked  
3/4 cup whipped cream  
   
Decoration  
Whipped cream  
pulp of 2 passion fruit  

 

Method

Pastry

Preheat oven to 375 degrees.

Sift flours, rub in butter. Add icing sugar, orange rind, egg yolk & enough juice to form a stiff dough. Press into greased & floured spring form pan. Bake 20 to 25 minutes and allow to cool.

Filling

Drain pineapple. Place 1 cup pineapple syrup, juice and pulp of passion fruit & gelatine into a small saucepan.Stir over low heat until gelatine dissolves. Chill until partially set.

Beat cream cheese until soft & gradually add sugar. Add gelatine mix and beat well. Fold in pineapple, rice & whipped cream. Pour into cooled base and chill for 30 minutes.

Decorate with whipped cream & drizzled passion fruit and chill a further 2 to 3 housrs before serving.
