German Poato Cake

Ingredients

Cake  
   
1 cup warm mashed potato  
2 tbs. butter  
1 1/2 cups sugar  
4 cups SR flour  
1 cup sultanas  
2 eggs  
1 1/2 cups milk  
1 tsp. nutmeg  
   
Topping  
   
1 cup plain flour  
2 tbs. butter  
3/4 cup sugar  

 

Method

Preheat oven to 190C

Make topping first by rubbing butter into flour & sugar.

Cream butter & sugar then mix in the potato. Mix egg with the milk. Add flour, sultanas and milk/egg mixture and stir. Pour into foil lined baking dish & top with topping mixture. Bake for 40-60 minutes.
