Light Ginger Cake
Ingredients
125g butter | |
1/2 (100g) cup brown sugar, firmly packed | |
2 eggs | |
2 cups (300g) plain flour | |
1/2 tsp bicarbonate of soda | |
1 tsp ground ginger | |
1 cup (250ml) golden syrup | |
1/2 cup (125ml) milk |
Method
Coat 21cm round cake tin with non-stick spray. Combine all ingredients in medium bowl of electric mixer and beat on low speed until ingredients are combined. Then, beat on medium speed until mxture is smooth and changes colour. Spread mixtute into prepared tin.
Bake in moderate oven about 50 minutes. Stand 5 minutes before turning onto wire rack to cool.
Server with hot butterscotch sauce and ice cream.
