Paddy Pancakes

Ingredients

1 cup (150g) SR Flour  
1/2 cup (100g) caster sugar  
1 tsp. cinnamon  
1/2 tsp. baking powder  
3/4 cup (185ml) milk  
1 egg, lightly whisked  
20g butter, melted  
1 tsp hot water  
   

Method

Sift flour, sugar, cinnamon and baking powder into a bowl. Make a well in the centre and add milk, egg, melted butter and water. Whisk until mixture forms a smooth batter. Cook in a frying pan with a little butter.

Delicious served with jam, maple syrup and whipped cream.
