Peach Shortcake
Ingredients
1 1/2 cups SR Flour | |
2 tbs cornflour | |
pinch of salt | |
1/8 tsp nutmeg | |
1/3 cup butter | |
1 egg | |
4 tbs sugar | |
1/2 cup milk | |
1/2 cup shopped toasted walnuts | |
drained peach slices | |
cinnamon |
Method
Sift together flour, cornflour, salt & nutmeg. Rub in butter then add walnuts. Beat together egg & sugar, stir in milk and add to flour mixture. Mix to a soft dough. Knead lightly on floured surface till smooth, then put into 8" square sandwich tin. Brush with melted butter. Bake in oven at 375 degrees for 25 minutes.
