Tomato Sauce
Ingredients
5.5 kg tomatoes | |
110g (1/3 cup) salt | |
60g (15 cloves) chopped garlic or 3 tbs minced garlic |

3 medium (1/2 kg) onions, chopped | |
850g (3 3/4 cup) sugar | |
1/3 tsp cayenne pepper | |
1l sweet spiced vinegar | |
Method
Cut tomatoes into large dish, sprinkle with salt and leave OVERNIGHT. Next morning drain off liquid thoroughly. This is very important.
Place tomatoes into very large saucepan then add garlic, onions, sugar and cayenne pepper. Boil vigorously for 1 hour. Strain through fine strainer or moulee.
Add vinegar and boil until thick enough (1 to 1 1/2 hours). Bottle in clean, dry sauce bottles.
